HISTORY BEHIND THIS BREAD:
Pan Gallego is a typical Spanish country bread, which is not only offered in various forms as PAN GALLEGO, but also in many different recipes. For this reason, I developed my own recipe, where I simply let my experience about country bread flow into it. Here it is based on a pure sourdough, but in Spain I mostly know it with POOLISH. Everyone can choose this variant for themselves. My favorite is this variant, possibly with some toasted flour (5%).
